Fig Balls are back!
The fig ball has been made throughout Calabria since time immemorial. If you want a truly intense fig experience, you must try this savory specialty. Its preparation involves drying the figs for days, then oven glazing and packing them together with molasses and honey of figs. This preparation is then wrapped in a fig leaf and tied with a piece of straw, creating an intriguing and interesting old world appearance.
This southern Italian pasta factory run by the Marella family makes pasta the way it was made hundreds of years ago: by hand. The pasta dough goes through the extraction process using a bronze dye. Large industrial pasta factories uses a more resistant teflon coated steel dye which gives the pasta a smooth white look. Artisan pasta is extruded through a bronze dye giving the dried pasta a rough texture to better hold the sauce.
This bergamot preserve is absolutely delicious and will surprise anyone who eats it with its perfumed citrus flavor. Not too sweet and not too sour or bitter. Comes from the only place in Italy where it can grow: near Reggio Calabria in the tip of the “toe” of Italy.
