“…milk’s leap toward immortality.”
Cheese is exciting, creamy, crumbly and pungent. Cheese is mild, unctuous, satisfying and brilliant. Cheese is rustic, refined, earthy and heavenly. Cheese comes in all manner of shape, size, color and smell. It’s not important that you know all of the specifics, just let us help you find what you like. We can even track what you take home, so you won’t have to remember the name of that fantastic gooey goat cheese you picked up last time.
We carry about 150 artisan cheeses featuring American and European farmstead cheese. Because cheese is an agricultural product, it is seasonal, so the case changes throughout the year. Ask for a sample of our newest offerings! If you have a specific cheese in mind, stop by, call or email.
We have great artisanal examples of classic European cheese as well as a broad selection (half the case!) of artisan and farmstead cheese from across the US and the great state of Texas. American cheese makers are making their mark in the world of cheese, winning awards in global competitions with their exceptional work.
Cut to Order – Fresh!
After you have tasted and selected, let us cut your cheese straight from the wheel. Cheese cut from the wheel is fresh and vibrant. It hasn’t been suffocating under plastic and languishing away on a shelf for who knows how long. We also cut to your specifications. Only need an 1/8th of a pound? It is our pleasure to give you as little or as much as you want.
Farmstead vs. Artisan vs. Industrial
What does farmstead mean? What is the difference between farmstead and artisan? Simply put, farmstead cheese is hand-made cheese produced on the farm from the farmers own herd. Artisan cheese can be made with milk produced elsewhere, but it is also made by hand. Industrial cheese is made by machine, with most of the human element taken out of the process.
Farmstead and artisan cheeses have character. Each cheese is different, depending on all sorts of factors, like what the animals were eating at that time of year. It’s this character that gets us excited each time we cut into a new wheel! Let us be your tour guides!
